This is a pork belly that’s sliced thick, slow-roasted @ 250f-275f fat renders and cooks the belly to a perfect 170f. The result? Ridiculously juicy, impossibly tender yet still-sliceable meat. This recipe is one you need to make! Absolutely INCREDIBLE!
Prep Time 1 hr
Cook Time 3 hrs
Apple juice/water 50/50 for spritzing
Pork Belly
Slice long ways 2 inches wide in thickness
Grab some sticks soaked in water or skewers and slide through the pork belly(long ways)
Now coat with your favorite rub
Smoking the pork belly
Preheat smoker to 250-275F
Place on the smoker and smoke for 1 1/2 hours.
At the 1 1/2 hour mark spritz and turn(50/50) Apple juice/water
At 170F internal remove to rest
Kiss with flame(optional)
