This is a pork belly that’s sliced thick, slow-roasted @ 250f-275f fat renders and cooks the belly to a perfect 170f. The result? Ridiculously juicy, impossibly tender yet still-sliceable meat. This recipe is one you need to make! Absolutely INCREDIBLE!

  • Oklahoma Joe 1200 pellet grill 250f-275f

Ingredients
  

3 Lb Pork Belly

    Your favorite rub

      Apple juice/water 50/50 for spritzing

        Instructions
         

        Pork Belly

        • Slice long ways 2 inches wide in thickness
        • Grab some sticks soaked in water or skewers and slide through the pork belly(long ways)
        • Now coat with your favorite rub

        Smoking the pork belly

        • Preheat smoker to 250-275F
        • Place on the smoker and smoke for 1 1/2 hours.
        • At the 1 1/2 hour mark spritz and turn(50/50) Apple juice/water
        • At 170F internal remove to rest

        Kiss with flame(optional)

        • Introduce live fire to the pork belly turning till charred.
        • Rest and slice
