Ingredients
  

Shrimp large 16-20 if possible

    Scallop also large

    • 1/4 Cup Chopped Garlic
    • 1/8 Cup Chopped Shallot
    • 1 Cup White Wine
    • Lemmons
    • S&P To Taste
    • White Rice or Pasta

    Instructions
     

    Shrimp and Scallops

    • Dust in flour both the peeled and deveined Shrimp and Scallop
    • Heat some oil on the griddle or pan on medium heat. Add the scallops and shrimp once they are hot, app. 400 degrees. Sear them on each side until golden brown, which takes about one to three minutes per side. Then remove the scallops and shrimp to a plate.

    Deglaze the Griddle or Pan.

    • Turn the heat down to medium-low 375-400 degrees. You do not want the cooking surface to exceed 400 degrees. Next, add the garlic and shallots along with a dab of butter. You can also add the juice of 1/2 a lemon. After 1-2 minutes add the 3/4 to a cup of white wine scraping the griddle or pan. Bring this mixture to a simmer and let it cook until the liquid has reduced. At that point start adding your butter and lemon juice. Keep that sauce moving at a low temperature and incorporate it together.
      Add in your shrimp and scallops.
