Hatch Chili Enchiladas Recipe. In today's show, we do up some Hatch Chili Enchiladas on my Pit Boss Ultimate Griddle. These Hatch Chili Peppers are all over this dish and truly make a difference.

Ingredients
  

Salsa Verde

  • 4 Blistered Hatch Chili Peppers
  • 1/2 onion
  • 1/2 cup Cilantro
  • 1/4 teaspoon cumin
  • 1/4 cup heavy Cream

Thick Chicken Breast

    Enchilada Sauce

    • 1/2 cup Heavy Cream
    • 1 Package phili cream cheese
    • 1/2 to 1 bag Mexican Cheese

    Instructions
     

    Cook the Chicken Breast

    • Saute or Griddle cook the chicken breast

    Make the Salsa Verde

    • Blend or mix the onion, Cilantro, Cumin and heavy cream, and a handful of blistered hatch chili

    Make the sauce

    • Combine the heavy cream with Phili cream cheese and melt. After combining and the Mexican Shredded Cheese and melt. At that point add your diced-up chicken.
